Ingredients
1 lb boneless skinless chicken breast
1 tbsp olive oil
2 tsp taco seasoning
1 tsp smoked paprika
1 tsp garlic powder
0.5 tsp onion powder
0.5 tsp cumin
Salt and pepper to taste
8 small corn or flour tortillas
1.5 cups shredded Mexican cheese blend
Shredded lettuce for garnish
Diced tomatoes for garnish
Diced red onion for garnish
Fresh cilantro for garnish
Sliced avocado for garnish
Greek yogurt for topping
Salsa for topping
Lime wedges for serving
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the diced chicken breast with olive oil, taco seasoning, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper.
Heat a non-stick skillet over medium-high heat and cook the chicken for 6 to 8 minutes until browned and fully cooked through.
Warm the tortillas in the microwave for 20 seconds to make them pliable.
Place a generous portion of chicken and cheese into each tortilla and fold them closed.
Arrange the folded tacos on the prepared tray, brush the tops with a little oil, and bake for 8 to 10 minutes or until crispy.
Serve immediately topped with fresh vegetables, Greek yogurt, salsa, and a squeeze of lime.
Notes
Ensure chicken pieces are diced uniformly for even cooking. For extra crispiness, you can lightly coat the tortilla exterior with cooking spray before baking. Store leftovers in an airtight container for up to 3 days and reheat in the oven to maintain crunch.
