Ingredients
1 lb tilapia fillets
1 tablespoon olive oil
2 teaspoons blackened or Cajun seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and black pepper to taste
8 ounces tortilla chips
2 cups shredded Monterey Jack or Mexican cheese blend
1 cup black beans, rinsed and drained
1 cup corn kernels
1 jalapeño, sliced
1/2 cup salsa or pico de gallo
1 cup shredded red cabbage
1/4 cup chopped fresh cilantro
1/2 cup diced tomatoes
1/2 avocado, diced
1/4 cup plain Greek yogurt
Lime wedges for serving
Instructions
Preheat your oven to 400°F (200°C).
Pat tilapia fillets dry and brush with olive oil.
Coat fish evenly with blackened seasoning, smoked paprika, garlic powder, salt, and pepper.
Heat a skillet over medium-high heat and sear fish for 3-4 minutes per side until it flakes easily.
Break the cooked tilapia into bite-sized pieces.
Spread tortilla chips on a large rimmed baking sheet.
Top chips with black beans, corn, jalapeño, and the broken tilapia pieces.
Sprinkle the Monterey Jack cheese over the assembly.
Bake for 5-7 minutes or until the cheese is melted and bubbly.
Remove from oven and top with red cabbage, cilantro, tomatoes, avocado, and a dollop of Greek yogurt.
Serve immediately with lime wedges.
Notes
Ensure the fish is patted extremely dry before seasoning to achieve a proper crust. You can customize the heat levels by adjusting the amount of fresh jalapeño or adding a dash of hot sauce if desired. Store leftovers in an airtight container for up to 24 hours, though they are best served immediately to retain chip crunch.
